Mango Ginger Dressing

Ingredients:
- 2 tbsp mango ginger, grated
- 2 cloves garlic
- Quarter cup cold-pressed sunflower oil
- 2 tbsp honey
- Juice of 2 limes
- 1 small green chili, chopped (optional)
- Half tsp black pepper
- Half tsp salt
Steps:

Blend all ingredients in a small mixer jar until thick and creamy.

Transfer to an airtight glass jar.

Store in the fridge and use within five to six days.

Shake the bottle well before using as the oil may separate.

Use one tablespoon per salad portion, especially on roasted root vegetable salads.
Mango Ginger And Turmeric Instant Pickle
This recipe yields about 150g of pickle.
Ingredients:
- 100g mango ginger
- 50g fresh turmeric roots
- 3 green chilies
- 4 limes/lemons
- 2 tbsp pink Himalayan salt
Steps:

Wash and dry the mango ginger and turmeric roots; scrape the skins if needed.

Slice the roots thinly lengthwise, then chop into 1-inch juliennes.

Slit and halve the green chilies; grate or finely chop the lime skins.

Combine julienned mango ginger, turmeric, green chilies, chopped lime peel, and salt in a bowl.

Juice the limes into the bowl.

Mix all ingredients with a clean spoon and place into a dry glass jar.

Consume within five to six days; leftover liquid can be used as a salad dressing substitute for lime juice and salt.
