Coriander Seeds—classically known as Dhanyaka—as one of the most essential "balancing" spices in the Ayurvedic kitchen. It is often called the "refrigerant of the spice world" because it has the unique ability to kindle the digestive fire (Agni) without creating excess heat (Pitta).

Whole Dhaniya is the dried ripe seed-like fruit of Coriandrum sativum, commonly called coriander. It is different from fresh coriander leaves, ground coriander and unrelated seeds sold under similar regional names.
They may be dry-roasted, tempered, crushed or ground for curries, pickles, spice blends and beverages. Use normal culinary quantities according to the recipe rather than treating the spice as a medicine.
