What is Jowar (Sorghum)?

Jowar is an ancient gluten-free millet that has been a staple of the Indian diet for centuries. In Ayurvedic texts, it is described as having Madhura (sweet) and Kashaya (astringent) tastes with a Sheeta Virya (cooling potency). Unlike wheat, which can be heavy and mucus-forming, Jowar is Ruksha (dry) and Laghu (light), making it the ideal grain for balancing Kapha and Pitta doshas.
